It's a great concept and I deff. think you can pull it off. But I have a few questions:
1.) Are you going to be making the scene as well or are you going to composite the car into one?
2.) If compositing is the case then are you going to be video taping it yourself or taking an already pre-existing one?
Just thought to ask and see what your thoughts where leading to.

As I commented elsewhere, it may be tricky to create a large/long enough background to accomodate the speed you are talking about. If you decide to composite into a real background, you may be able to find some fast-moving desert footage with no car in it.
